Onion & Pepper Bratwurst Bake
Ingredients:
- 1 tablespoon olive oil
- 2 pounds Bison Bratwurst
- 4 small red onions (1 1/4 Cup), peeled and sliced into 1/4-inch-thick rounds
- 2 Red peppers
- 2 TBSP of fresh thyme leaves OR 2 tsp of dried thyme
- 2 TBSP Apple Cider Vinegar
- Salt and freshly ground pepper
Instructions:
Add onions and peppers to a saute pan, and stir. Add 1/2 cup water, cover, and cook over medium heat, stirring occasionally, until onions and peppers are soft. Place bratwurst on top of onion mix adding a second 1/2 cup water. Simmer for 15minutes. Remove lid and bratwurst. Stir in thyme and salt and pepper seasoning into onion mixture and then place onion mixture into bottom of casserole. Place Bratwurst on the bed of onions & pepper mixture. Sprinkle apple cider vinegar onto Bratwurst. Bake at 400F for 25 minutes or until browned.
